Raspberry Rosé Wine Slushies

New York City is on fire right now. At least, that's how everybody is acting. It's about 95 degrees, but feels like 105. It's humid. The sun is blazing.

Total madness.

But I confess that...I don't hate it!

I'm one of those crazy people that loves the sun and the heat. Humidity feels good on my skin (horrible for my hair, but I just throw it in a bun and it's all good) and the heat is delicious.

I mean, I'm not about to run around the block in this, but I'd never do that anyway.

But I will happily sit in the sun wearing a pretty breezy dress and holding a glass of something icy.

Something like this Raspberry Rosé Wine Slushie.

Rosé is one of my summer favorites, and adding frozen fruit and ice to it and whirling it up into a gorgeous frozen cocktail just makes it all that much more amazing.

This is a simple drink that's a lot of fun and always a crowd pleaser. Whirl one up in your blender today and stay cool!

Raspberry Rosé Wine Slushies
Serves 2

Ingredients
2 cups rosé wine
3 cups frozen raspberries
1 cup ice cubes
1/4 cup raspberry liqueur or raspberry vodka (you can also use something like Grand Marnier or Triple Sec if it's what you have on hand)
1/4 cup fresh lemon juice
2 tablespoons honey

Directions
Combine all ingredients in a blender and process until very smooth and slushy. Serve immediately.

Raspberry Lemon Punch Cocktail (Featuring Smirnoff Sorbet Light)

Raspberry Lemon Punch
Serves 1, multiply as desired

Ingredients
1/4 cups fresh raspberries
Ice
1 1/2 oz Smirnoff Sorbet Light Raspberry Pomegranate Vodka
1/2 cup fresh or bottled lemonade
Lemon slice, for garnish

Directions
Muddle the raspberries in a tall glass. Add ice, vodka, and lemonade. Stir and serve garnished with a lemon slice.

Springtime Italian Rainbow Cookies with Lemon Curd

I'd like to introduce you to one of my absolute all-time favorite sweets.

It's my bright and breezy spring twist on the classic Italian Rainbow Cookies, which you already know I'm obsessed with.

I call these Lily Pullitzer beauties my Springtime Rainbows, and I think they are just perfect for the season!

Brightly colored layers of moist, dense almond cake are filled with tart lemon curd and seedless raspberry jam. Instead of the usual dark chocolate, I cover them with a crackling shell of sweet white chocolate which is perfect against the cool tartness of the lemon curd.

Sliced into one-inch bites, these are fantastic with a cup of tea or a glass of refreshing strawberry thyme limeade. They're also gorgeous and would be a welcome treat at any spring or summer brunch or tea party.

I developed this recipe nearly 5 years ago when I briefly ran a mail order business selling and shipping these cookies all over the country. I specialized in rainbow cookies in a variety of flavors and colors. I also made this amazing Italian Rainbow Cookie Cake.

It was a success, but exhausting since I was also maintaining a full-time job as a magazine editor. After a few months of no sleep (and permanently pink and green fingertips!) I realized that it wasn't the life for me.

Now I just bake up a few batches of these cookies for my friends, parties, and a few select special occasions.

Such an occasion came up this past weekend, when I was asked to participate as a blogger baker for the Sweet Sensations dessert tasting benefiting C-CAP or The Careers Through Culinary Arts Program--a wonderful organization that works with public schools across the country to prepare under-served high school students for college and career opportunities in the restaurant and hospitality industry.

I'll be sharing more about the event later this week when I get the photos in, but for now I want to share this cookie recipe with you. 

I made 100 of these cookies to share with the guests on Sunday, and they were definitely a hit. 

FYI: From the photos you can see that the white chocolate shattered a bit--that's because I forgot to bring along a proper knife to the event location (a good sharp chef's knife is best), and had to use a small ceramic knife that was a little too thick to get a nice clean cut. They still tasted amazing, though!

I'm not typically a white chocolate fan, but I really love the way it pairs against the tart lemon curd in this recipe. Even if you don't like white chocolate, I urge you to try it. It's honestly just the thing!

Springtime Italian Rainbow Cookies
Depending how you cut them, this makes between 20-40 cookies

Ingredients
1 cup butter (2 sticks), softened
1 cup granulated white sugar
4 large eggs, room temperature
8oz almond paste, grated (this is flexible--you can use between 6-10oz with same results)
1 tablespoon pure almond extract
Zest of one whole lemon
2 cups all purpose flour
1 teaspoon kosher salt
hot pink, green, and yellow liquid food coloring
1 cup lemon curd (I love Dickinson's or use a homemade curd)
12oz (1 bag) white chocolate chips or chopped white chocolate (use the delicious kind!)
1 teaspoon Crisco or coconut oil

Directions
Preheat oven to 350 degrees. Line three 9" square baking pans with parchment paper. You can also just do one layer at a time if you don't have multiple pans.

Cream butter and sugar in the base of a mixer for 5 minutes until very light and fluffy. Add eggs and beat for 3 more minutes. Add almond paste, extract, and lemon, and beat for 2-3 more minutes.

In a separate bowl, whisk together the flour and salt, and mix into the wet ingredients until completely combined. Divide batter into three bowls and dye each a different color (I like yellow, lime green, and pink, but you can play around and use whatever colors you like!)

Spread each bowl of batter into one of the prepared pans, then bake for about 9 to 12 minutes, or until edges are a bit golden and middle is set. Transfer to cooling racks and cool completely.

To assemble: lay the yellow layer down then top with 1emon curd, spreading evenly out to the edges. Top with the pink layer, then spread with raspberry jam. Finally cover with the green layer. Wrap the entire stack tightly with plastic and cover with a heavy book or pan. Let chill in the fridge for at least 4 hours (or overnight).

Place the white chocolate chips in a heatproof bowl and microwave for 1 minute or until melted, stirring until smooth. Stir in the Crisco until it melts and is evenly distributed (this will make it possible to cut the chocolate cleanly). Pour over the layered cake and spread evenly. Let chill in the fridge for one hour, or until completely set. Cut into 1" pieces and serve.

Almond Raspberry Shortbread Cake

There are few things that make me happier than almond-flavored desserts. It's basically my kryptonite. (As evidenced by years and years of almond recipes on this site.)

Add tart raspberries to the mix and I'm yours. Tie me up with a ribbon.

What I love about this Almond Raspberry Shortbread Cake is that it's not really a cake at all. It's kind of a tart. Actually, it's more like a giant stuffed cookie.

A giant almond shortbread cookie stuffed with tart raspberry jam and topped off with crunchy sugar crystals and slivers of almond.

It's the stuff that (my) dreams are made of!!!

This is a wonderful dessert to make for the holidays because it is:
  1. Gorgeous--sparkly from the sugar, plus the lovely deep red from the raspberries. It's basically a party dress!
  2. Easy--no fussy crusts to deal with (you just press this right into the pan) and the filling comes from a jar (choose a good one!), and...
  3. The kind of dessert that can be made a few days in advance and will still taste and look just as wonderful!
You can also have a lot of fun with it--substitute an orange marmalade and add some zest to the crust for a citrus version!

Or Nutella and crushed hazelnuts on top for a chocolatey twist!

Or you could go tropical with a guava paste filling! (Note to self: must try that ASAP!)

Once you get the crust down, it's really up to you what you want to do with the inside.

Oooh...this would also be lovely as tiny individual tarts!

OK now...off you go! Play! Get creative! That's what cooking is all about.





Almond Raspberry Shortbread Cake
Serves 8

Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
3/4 cup unsalted butter, at room temperature (1 1/2 sticks)
1 cup granulated white sugar
1 large egg
1 large egg yolk + large egg white, divided
2 teaspoons pure almond extract
2 cups seedless raspberry jam
1 tablespoon lemon juice
1/3 cup sliced almonds
3 tablespoons turbinado sugar (sugar in the raw)

Directions
Preheat oven to 350 degrees. Whisk together the flour, baking powder, and kosher salt. Set aside.
In the base of a stand mixer, beat the butter and sugar until light and fluffy--about 5 minutes. Add one large egg plus one large egg yolk (save the white) and continue to beat for 2 minutes. Add the vanilla extract and lemon zest and beat in well. Slowly add in the flour mixture, and let mix in until combined and all the ingredients come together.

Turn the dough out onto a board and knead until smooth. Divide the dough in half. Wrap one half in plastic wrap and place in the fridge for 30 minutes. Meanwhile press the other half of it into your prepared springform pan, pressing so that it comes up the sides about one inch and covers everything evenly.

Whisk the jam and the lemon juice together, and then pour the jam into the indentation made by the dough and spread evenly. Pull the other half of the dough out of the fridge and place between parchment paper. Use a floured rolling pin to roll it into a circle and gently lay it over the jam so that it reaches the edges of the pan and covers the jam completely. Press the edges down to seal them. Brush the top of the crust with the reserved egg white and sprinkle with almonds and turbinado sugar.

Bake for 40 minutes, or until the cake is golden and a tester inserted into the center comes out clean. Let cool in the pan for 30 minutes then gently remove the sides and let cool completely.

Raspberry Vanilla Lemonade

I've got a fun beverage idea for you today! It's a Raspberry Vanilla Lemonade. I whipped this drink up on Monday when I had guests coming over for brunch because I realized that I didn't have anything else in the house but water! I only ever drink water, lemon water, or herbal tea (I don't like soda or sugary drinks and prefer to eat--rather than drink--my calories) so I never keep it in the house. When prepping for brunch, I thought about food, but completely forgot to get something to drink. Fortunately, I remembered the packet of frozen raspberries in the freezer and since I always have dozens of lemons and limes (I literally have a citrus drawer in my fridge), I got to work.

As gorgeous as it looks, this is a super easy drink to put together. Simply combine the raspberries (or sub any other kind of berry) with sugar and a little vanilla extract, and let them macerate in the bottom of a pitcher or large bowl for about 20 minutes or so (you can even prep this part overnight if you prefer). In the meantime, you can squeeze your lemon juice (PLEASE don't use those gross little squeezey bottles--that stuff is nasty). Then add the lemon juice, plus water and ice, give it a stir, and you're all set! I leave this drink pulpy and with the seeds in it, because I like it that way (plus, added fiber!), but if you prefer, you can certainly pass it through a sieve to remove the seeds.

I love the subtle twist the vanilla extract adds to this drink. It's not super noticeable, but it definitely adds a little something special. I also tossed a split vanilla bean into the jar for good measure (totally optional).

This is a great drink to serve at bridal or baby showers, or really just about any summer party. I love that it's so bright and colorful, yet completely natural.

Want to spike it up? Substitute part of the water for your favorite booze--I suggest either vodka or tequila.

Raspberry Vanilla Lemonade
Serves about 6

Ingredients

1 cup turbinado sugar (sugar in the raw; substitute granulated white sugar)
1 1/2  cups fresh or frozen raspberries
2 teaspoons vanilla extract
1 cup fresh lemon juice
4 cups cold water
1 vanilla bean, split (optional)
2 cups ice

Directions
Combine sugar, raspberries, and vanilla in a large pitcher or bowl. Stir and let macerate for 20 minutes. Use the back of a fork to mash raspberries periodically.

Add lemon juice and water, and stir. Add the vanilla bean, if using, and ice. Stir and serve immediately.
