Strawberry Lemon Vodka Punch

June marks the start of the real summer season. A time for coming together with friends and family to celebrate occasions and—more importantly!—each other. June is also Pride month, the weeks set aside each year for honoring and supporting the LGBT community.

This summer, I’ve teamed up with Smirnoff to share some bright and creative punch recipes to serve at all your summer festivities. This classic fave has long been the perfect way to serve up cocktails for a thirsty crowd, keeping everybody (including the host!) happy.

Pride parties are some of the most colorful ones around, and it’s the perfect occasion to have a little fun with your menu. Big bright salads, fruity garnishes, and rainbows of colorful vegetables make it easy to create a festive, but sophisticated spread.

One of my favorite ideas are these little Rainbow Veggie Dippers, which bring together different shades of carrots, roasted sweet potatoes, squash and peppers into an an edible pride flag (no food coloring necessary!).

And when it comes to cocktails, it doesn’t get any easier!

The fresh colorful fruit and gorgeous herbs already have so much flavor that you basically just have to add in your favorite Smirnoff and you’re ready to enjoy!

For this Strawberry Lemon Vodka Punch, I’m keeping it simple and letting the true colors and flavor of gorgeous summer strawberries and bright tart lemons shine through.

The fun trick here involves pureeing whole lemons along with your strawberries to create the base for your drink. You take the seeds out, but use everything else (yes…even the peel and pith!). Once pureed, it adds a gorgeous hint of floral citrus that is both elegant and unexpected.

It’s just the tiny little trick that takes a simple drink to the next level. Whisked up with a bit more fresh lemon juice and Smirnoff 21, it’s the perfect summer sip for your party.

To keep my drinks cool, I also like freezing fresh whole strawberries in over-sized ice cubes. You just need one or two per glass, and they do triple-duty of garnishing your drink, keeping it cool, and not watering it down.

Strawberry Lemon Vodka Punch
Serves 12

Ingredients
2 1/2 pounds fresh strawberries, rinsed with leaves removed
2 large lemons
1 cup granulated sugar (increase to 1 1/2 cups if berries are more tart than sweet.)
1 cup fresh lemon juice
2 1/4 cups Smirnoff 21 vodka
6 cups lemon seltzer

Ice
Fresh mint, for garnish

Directions
Quarter lemons and discard any seeds. Add to food processor (entire wedges, including peel and pith). Add the strawberries, sugar and lemon juice, and puree until smooth. (If you have a small blender, do this in batches.)

Place a sieve over your punch bowl, and pour strawberry puree through sieve into bowl, discarding any solids that remain.

Stir in vodka, and chill at least four hours. Just before serving, add seltzer.

Serve punch over ice garnished with fresh mint.

Fluffernutter Hot Chocolate with Roasted Salted Peanuts

This decadent peanut butter hot chocolate creation is one of the drinks I created for my DIY Hot Chocolate Bar Party.

Based on the classic Fluffernutter sandwich (made with peanut butter and marshmallow cream), it's a rich, cozy beverage made with dark hot chocolate, peanut butter, Smirnoff Fluffed Marshmallow Vodka and topped with lots of whipped cream and roasted salted peanuts.

It's the ultimate sweet and salty winter beverage!

You start off by whisking together some of the marshmallow vodka with a little bit of creamy peanut butter. I do this right in the mug, but if you're serving more than one, you can also multiply the recipe and do this in a carafe.

You then pour in some hot dark chocolate, and stir until it's all evenly combined. (I made mine from scratch using milk and chocolate chips, but this would be equally lovely if you use a good mix.)

Add a generous dollop (or swirl!) of whipped cream and a handful of salty roasted peanuts, then sit back and enjoy.

Fluffernutter Hot Chocolate with Roasted Salted Peanuts
Makes 1 serving, multiply as necessary

Ingredients
2 oz Smirnoff Fluffed vodka
1 tablespoon creamy peanut butter
3/4 cup basic Dark Hot Chocolate (click for recipe or use store-bought)
Whipped Cream
Roasted Salted Peanuts
Cinnamon Stick

Directions
Combine vodka and peanut butter in bottom of a mug and use a fork to whisk until smooth. Pour in hot chocolate and stir. Top with whipped cream and garnish with a sprinkle of roasted salted peanuts and a cinnamon stick.

Whipped Vanilla White Hot Chocolate with Cocoa Nibs

When I was growing up, my friends and I used to frequent a coffee shop in the mall that sold all kinds of fun frothy drinks. We used to love an iced white chocolate drink they sold topped with whipped cream and these little chocolate crunchies.

It's something that I haven't tried in years (I don't even know if the shop is still there), but when I was experimenting with recipes for my recent DIY Hot Chocolate Bar Party, I accidentally put together a drink that tasted just like that long ago favorite.

(But with a distinctly grown-up twist!)

This Whipped Vanilla White Hot Chocolate with Cocoa Nibs is a luscious alternative to the usual hot chocolate.

Made with creamy white hot chocolate at the base, and spiked with Smirnoff Whipped Cream Flavored Vodka, it's a decadent winter treat. I top it off with a generous amount of real whipped cream, and garnish with a cherry and roasted cocoa nibs.

Whipped Vanilla White Hot Chocolate with Cocoa Nibs
Yields 1 serving. Multiply as necessary.

Ingredients
1 oz Smirnoff Whipped vodka
1/2 oz Vanilla vodka
3/4 cup basic White Hot Chocolate (from-scratch or from a mix)
Whipped Cream
Roasted Cocoa Nibs
Maraschino Cherry

Directions
Add vodkas to a mug and top off with white hot chocolate. Garnish with whipped cream, roasted cocoa nibs, and a maraschino cherry.

The Cranberry 75 Cocktail

If you were to ask me what my favorite cocktail is, I'd quickly answer the French 75. This classic cocktail was invented in France during World War I, and then later became popular in the US at the legendary Stork Club during the 1920s and 30s.

With Thanksgiving and the holidays quickly approaching, I decided to add a cranberry twist to the original, substituting the classic gin and lemon with cranberry vodka and a bit of tart cranberry juice (the unsweetened kind).

Mixed with sparkling white wine or champagne it's an elegant and festive cocktail that's as fun to look at as it is to sip.

The recipe below includes instructions for two cocktails, but if you're entertaining a crowd, you can multiply the recipe to fill a pitcher, and then just top off with champagne as your guests arrive.

Don't forget the fresh cranberry garnish!





Cranberry 75 Cocktail
Yields 2 cocktails (multiply as necessary!)

Ingredients
2oz Cranberry Vodka (such as Smirnoff)
2 teaspoons simple syrup
2 teaspoons lemon juice
2 tablespoons unsweetened cranberry juice
4oz dry sparkling white wine or champagne
Fresh cranberries

Directions
Combine vodka, simple syrup, lemon juice, and cranberry juice in a shaker with ice. Shake until frosty then pour evenly into two champagne flutes. Top with sparkling white wine and garnish with fresh cranberries.

Raspberry Lemon Punch Cocktail (Featuring Smirnoff Sorbet Light)

This light and refreshing vodka punch is perfect for summer parties or bridal showers.  Serve individually by the glass over ice, or multiply the recipe to fill a punch bowl or beverage dispenser.

Raspberry Lemon Punch
Serves 1, multiply as desired

Ingredients
1/4 cups fresh raspberries
Ice
1 1/2 oz Smirnoff Sorbet Light Raspberry Pomegranate Vodka
1/2 cup fresh or bottled lemonade
Lemon slice, for garnish

Directions
Muddle the raspberries in a tall glass. Add ice, vodka, and lemonade. Stir and serve garnished with a lemon slice.

Lemon Cucumber Martini (Featuring Smirnoff Sorbet Light)

I think of this as a martini for the non-martini drinkers--it's crisp, light, and not overwhelmingly vodka-y (if you know what I mean).

Made with Smirnoff Sorbet Light Lemon vodka, it's got lovely natural lemon flavor and just a touch of sweetness.

Lemon Cucumber Martini
Serves 1, multiply as desired

Ingredients
1/4 cucumber, diced, plus an additional slice as a garnish
1/2 lemon, juiced
1 teaspoon honey or simple syrup
1 1/2 oz Lemon Smirnoff Sorbet Light Vodka
club soda

Directions
Add the cucumber, honey, and lemon juice to a large shaker and muddle slightly, Fill with ice and add the vodka. Shake vigorously until the outside of the shaker is frosted. Strain into a martini glass and top off with club soda.

Garnish with a cucumber slice.
